Roasted Red Pepper and Zucchini Farfalle with Sausage


I designed this recipe myself!! Basically, I needed a quick carbohydrate-rich meal and had red peppers and zucchini in the fridge! Here's my rough version of the recipe:

1 medium onion, chopped
3 zucchini, diced
2 red peppers, cut in strips
4 sausages (Saucettes), cut in small pieces and sauteed in olive oil
1 jar of spaghetti sauce (you choose)
a few leaves of fresh basil
salt, garlic and oregano to taste

Saute onion, zucchini and red pepper in about a tablespoon of olive oil. Add fresh basil and let wilt. Turn heat down to low. Add sauce and spices, then sausage and mix together. When warm, dish onto cooked pasta. Enjoy!
