Meal Planning

It's something I've never been very good at: planning meals for the week and then finding time to COOK them! Lately it's become a bit higher on my priority list and I'm trying really hard to have good food highly accessible. This requires creativity, time-management, and forethought. Here are some of the general ideas I have for this week:

Breakfasts
scrambled tofu
biscuits n'gravy (still looking for a good recipe here)
cornmeal mush
muffins
smoothies
thickened fruit on toast
cream of wheat
buckwheat
cinnamon buns
oatmeal
banana bread

Dinners
meatloaf
cornmeal buns
cottage cheese loaf
enchiladas
creamed peas
yams
cooked carrots
lasagna

Suppers
potato leek soup
potato corn chowder
lentil soup
sub sandwiches
egg salad sandwiches

The jury is still out -- I'm looking for more options every day, since variety is the spice of life! I really hope to find time in the kitchen to make this happen. Mmmmm...=)
