"HOT!"

Peter has been saying a couple words here and there -- not super consistent however. His repertoire consists of 'hi' 'hello' 'daddy' 'mama' 'pretty?' 'uh-oh' and today 'HOT!' I was pulling muffins out of the oven and telling him to be careful because it was hot. He put an oven mitt on one hand and repeated that word again and again -- hot, hot, hottt, hot. He likes to emphasize the 'T' sound. I've noticed him parroting me a couple times as well, but it's kinda early for that. We'll see.


Here the muffin recipe if you have some overripe bananas on your counter like I did:

Best Banana Muffins Ever
Preheat oven to 375 degrees F.

2 T coconut butter, melted (or vegetable oil)
2 T sugar
1/2 tsp vanilla
2 ripe bananas
1/2 c flour
1/2 c oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
pinch of salt
chopped walnuts

Mash bananas. Combine dry ingredients separately. Add wet ingredients to dry. Don't overmix. Fill greased muffin tins 2/3 full. Bake 25 minutes. Cool in tins, then remove to wire rack. Makes 8-10 muffins.

I tripled the recipe today and got 20 muffins out of the deal. So, this recipe doesn't make much. Just to let you know. :)
