Hearty Carrot Banana Bread

Sometimes you need something to go with your leftover cream cheese. Something healthier than the cream cheese. Something with nuts and raisins.

Before discovering this recipe, I didn't think I needed a new banana bread recipe. But this one? It's special. It's got oats and whole wheat flour and yogurt. And carrots, nuts and raisins. This is not your usual banana bread. It's loaded. 

Especially when you smear a thick bit of cream cheese on top. Pretend you're at a wedding.

Hearty Carrot Banana Bread
inspired by Cinnamon Spice and Everything Nice

1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup quick oats
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1 cup mashed ripe banana (about 2 large)
3/4 cup plain yogurt
1/4 cup honey
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups grated carrot (about 3 large)
1/2 cup chopped raisins
1/2 cup chopped walnuts {or pecans}

Preheat oven to 350 degrees. Oil and flour a loaf pan.

Whisk together flour, oatmeal, baking soda, salt, cinnamon and nutmeg in a medium mixing bowl and set aside. Mash bananas and then add yogurt, honey, eggs, vanilla and grated carrots. Mix well.

Add the dry ingredients to the wet, just a little at a time. Don't over-mix. Fold in raisins and walnuts and spoon into the prepared loaf pan.

Bake 55-60 minutes or until a toothpick comes out clean. Cool for 15-20 minutes. Remove from pan and continue cooling on wire rack. Makes one large loaf.
