Fajita Like
So I have a friend to thank. Without her we may have been eating leftovers again for supper last night.

Never mind that blogging made me late getting the meal ready. I was planning to bake up some potatoes, onions, carrots, yams, tofu, etc. in the oven. But that takes some forethought.
So.....I put some rice in the rice cooker, fried some onions (a good start to anything right?) and looked in the fridge.
Rachel's idea of quesadillas translated into something kinda like fajitas, based on what I had on hand.
Tim thought they were fantastic and definitely repeatable. {yaya!!}
Flour tortillas (small, thicker kind) warmed slightly with Basmati rice, mixture of fried onions, green pepper, zucchini, and vegeburger, sprinkled with Tillamook Medium Cheddar.
There. Now maybe I'll remember what I did next time I have onions frying and no clue what to make.
