Feta Ciabatta Sandwich
I hope my friend Sara doesn't mind if I share her recipe. I just think it's so fabulous and shouldn't go unsung. We had these sandwiches for lunch today and I'm still smiling. They are tasty!! Tangy...feta-y...chewy...vegetabley... :))
1-Cut up and arrange on a baking sheet:
zucchini
yellow squash
red onion (or whatever kind)
red or orange pepper
You can do this the night before to save time!
2-Drizzle above veggies with olive oil, sprinkle salt/pepper on top
3-Bake in oven at 400 F for 20-25 min.
4 - Slice ciabatta bread in half horizontally

Walmart actually makes a really good ciabatta!
5 - Mix up vegennaise (or mayo), 2 cloves garlic (or 2 tsp garlic granules), juice from one lemon and salt together in small bowl
This can be done ahead of time as well.
6 - Spread vegennaise mixture on both sides of ciabatta, sprinkle top half of ciabatta with feta.... Broil in oven for just a couple of minutes.
7-Spread roasted veggies on half of ciabatta that doesn't have feta, put sandwich together and slice into individual servings.
