Weekend Eats

Thanks to some inspiration from my running buddy, we may be eating better this weekend. Usually, after trying to keep up with my menu plan all week, I kinda fizzle out when Tim's home. He's pretty amazing.

But I've got some fun ideas this weekend {okay, really just two}: 

Tofu and Cheese Stuffed Shells and corn on the cob


And we've made homemade pizza with butternut squash and ricotta before, but it's good enough to have almost every Sunday. A great seasonal delicacy since squash are so cheap right now.
