{Spicy} Cauliflower with Sesame
I was wrong. The kids loved the cauliflower! That'll teach me.
Here's what I used:
1 1/2 tablespoons extra-virgin olive oil
1 teaspoon cumin powder
1 medium onion, finely sliced
a couple pinches of turmeric
plenty of fine grain sea salt
1 medium / 12 oz cauliflower, cut into small flowerettes
1-2 teaspoon sesame seeds, lightly toasted
1 garlic clove, grated
4 cm / 1 1/2-inch piece of fresh ginger, peeled and finely grated
2-3 tablespoons chopped fresh cilantro / coriander
I omitted the red pepper and the jalapeno pepper. It still had plenty of flavor, but not the knock-your-socks-off, kids-run-away-crying heat.
Here's what I did:
First, heat the oil in a large skillet over medium-high heat, stir in the onions, along with the turmeric, cumin and a few pinches of salt. Cook, stirring often, until the onions caramelize a bit and turn lightly golden, roughly 7 - 10 minutes. Add the sesame seeds, garlic, and ginger. Continue to cook for another minute. Add the cauliflower and stir well. Cover the pan and cook the cauliflower over low-medium heat for 5-10 minutes, until just tender.
I added salt to taste and sprinkled cilantro in to cook a bit at the end. Serve with your choice of rice.
They (especially Ezra) really thought it was delicious!! Amazing.
