Peach Pecan Muffins

The first in a slew of peach-inspired recipes this week -- I present to you, the muffin. With juicy fresh peaches and crunchy pecans.
Tim whipped these up Sabbath morning {makes one dozen} and they were GONE by 12 o'clock. We didn't count. 
We certainly enjoyed. This is a really delicious recipe.
Peach-Pecan Muffins
discovered at The Little Girl's Guide to Sugar and Spice

2 cups flour
1 cup sugar
1 teaspoon cinnamon
pinch of nutmeg
1/2 teaspoon ginger
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup milk {we used soymilk}
1 egg {or 1/4 cup applesauce}
3 tablespoons vegetable oil
1 cup chopped fresh peaches
1/2 cup chopped pecans

Preheat oven to 400 degrees. Mix together the dry ingredients and set aside. Beat together milk, applesauce, and oil with a fork. Mix the wet and dry ingredients together until just combined. Fold in peaches and pecans, then spoon into greased muffin tins until 3/4 full. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
