Heart-Shaped {Vegetarian} Meatloaf





There is a time and a place for a vegetarian meatloaf. Right now is good enough for me.
We had leftovers for just over 8.9 seconds. Flash. Gone.

This is a FAVORITE recipe. And it comes to you, with love, just in time for Valentines Day. You're welcome. ;)

Vegetarian Meatloaf
loved for many years
1/4 c. butter or margarine {I used Smart Balance}
1 medium onion, chopped fine
1/2 green pepper, chopped fine
4 slices whole wheat bread, cut into cubes (or 1 cup of bread crumbs)
4 eggs, beaten
1/2 tsp. paprika
1 tsp. garlic powder
1/2 tsp. chicken seasoning (I used McKay's Chicken Style Seasoning)
1 20 ounce can Worthington Vegetarian Burger
1 cup grated colby cheese
1/2 c. brown sugar
1/2 c. ketchup

Saute onion and green pepper in butter or margarine. Stir in the cubed bread and mix well. Beat eggs with paprika, garlic powder, and chicken seasoning. Combine egg mixture with burger and grated cheese. Mix well and combine with onion, green pepper, and bread mix. Stir until well blended. Mix brown sugar and ketchup together. Grease a loaf pan and put half the sugar/ketchup in the bottom of pan. Add the loaf mixture, and spread the other half of the topping all over the loaf. Bake at 375 degrees F for one hour. Cool for 15 minutes and then dig in.

{Want them heart-shaped??}
Use a large heart-shaped cookie cutter, spreading sugar and ketchup mixture together in the bottom, stuffing it full of loaf mixture and topping it with more sweet sauce. Then carefully lift off the cookie cutter and repeat. I made six of these and baked them for just a bit less than an hour.
