Sweet Potato Scramble

1 Tbsp olive oil
4 eggs
large red sweet potato, peeled and chopped into small chunks {also called a yam}
1/2 cup chopped chives {fresh from the garden!}
1/2 cup chopped mushrooms {optional}
1/4 cup crumbled feta
salt to taste

I started by warming the oil in my wok {I don't have a skillet, so we decided to do a scramble rather than a frittata}. I sauteed the chopped sweet potato and the chives with a sprinkle of salt on medium high heat for 5-6 minutes, turning over a few times. I whipped up the eggs, mixed in the feta and mushrooms and added to the potatoes. I let them cook for a few minutes, then turned them and let them cook a bit longer, until the potatoes were soft and the eggs were hard. :)

Garnish with homemade salsa if that makes you extra happy.

The kids flipped their lids over these. They LOVED them and asked for seconds. And thirds, but by that time the pan was empty. We'll be making these again soon.
