Walnut, Coconut, Dark Chocolate Cookies

There are just some days when you might find the combination of coconut, walnuts and dark chocolate to be soothing. Running a marathon? Have these at the finish line. Organizing your closet? These can be your reward. Need something to get you through a book writing marathon? Glass of milk and a plate of cookies by your side.

These will nourish, encourage, motivate, replenish, energize, support. Wow. That's a lot of responsibility for a cookie. This one is up to the challenge.


Walnut, Coconut, Dark Chocolate Cookies

1/2 cup butter {coconut oil works too}
1/3 cup white sugar
1/2 cup brown sugar
2 tsp vanilla extract
2 eggs
2 1/4 cups flour {or 1 1/2 cups white and 3/4 cups whole wheat flour}
1 tsp baking soda
1/2 tsp salt
1 1/2 cups of dark chocolate chips
1 1/2 cups of flaked coconut
1 1/2 cups walnut pieces {or slivered almonds, if you prefer}
2 tsp flax meal {optional}

Preheat the oven to 375 degrees. Spray your cookie sheet lightly.
Using a beater, mix the butter, white sugar, brown sugar, vanilla, and eggs until creamy.
In a different bowl, mix the flour, baking soda, and salt together thoroughly.
Slowly add the flour mixture to the wet mixture until well blended.
Add the chocolate chips, coconut and walnuts and combine.
Then scoop spoonfuls of batter onto the cookie sheet.
Bake for about 8 minutes. The tops should be slightly golden. Allow them to cool before eating. :)
