{food} taco salad

I admit it. My kids have become picky eaters.

And we have tried so hard to avoid that. But somewhere along the way someone introduced them to Taco Bell and Kraft Dinner. And grilled cheese sandwiches and nachos.

And so everyday on our way home from swimming lessons, we pass that one place and his little voice cried out, "mommy, can we get Taco Bell?!" And I respond, "no dearest, not today...we have carrot juice and hummus sandwiches at home".

*sigh*

So when I made this concoction of lettuce and broccoli and kidney beans and well...fritos, I was surprised when they gobbled it down! It might have been a fluke though, because they didn't like it as well the second time I made it {adding cauliflower, this time}. I might need to go back to the simplest way of making it, for their sake.

This is a versatile salad. I remember eating it as a kid on weekend canoeing adventures. I loved it. I was a good eater.
You can probably pick out the ingredients just by looking at the pictures. And ratios are really subject to your taste as well. But I'll give you an idea of what I did.

Easy Taco Salad

a family recipe
1/2 head chopped lettuce {I used iceberg}
1/2 bunch chopped green onions
1/2 head broccoli cut into small pieces
1 can chopped olives
1/2 head cauliflower cut into small pieces {optional}
shredded cabbage {optional}
chopped peppers {optional}
small bag of Fritos corn chips
1 can kidney beans, drained
1 cup dressing {I use Vegenaise and thin it with a bit of water}
season with garlic granules and dill weed, as much as you like
