A Date with a Nectarine
I made some delicious nectarine cupcakes today. I took a few pictures and then couldn't decide which I liked best. So you get to see my top favorites. I might share the recipe too. ;)
Nectarine Cupcakes {Martha Stewart Magazine}
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
1/3 cup milk
1 teaspoon pure vanilla extract
6 tablespoons unsalted butter, room temperature
3/4 cup sugar
2 large eggs
2 medium nectarines, finely chopped
Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Stir together milk and vanilla. Beat butter and sugar with a mixer until pale and fluffy, about three minutes. With mixer running, add eggs, one at a time. Beat in flour mixture in three additions, alternating twice with milk mixture.
Line a standard muffin tin with baking cups. Fill each with one tablespoon batter, one heaping tablespoon chopped nectarines, and an additional two tablespoons batter. Bake until edges begin to turn golder, about 25 minutes. Let cool in tin.
Top with home-made whipped cream and sliced nectarines (or peaches). ;)
