Meal Planning Monday

My focus this week is to get more veggies into our diet. We were doing so great there for awhile, but things have slipped. So, back on guard. And who knows if I'll have time for all addition to Christmas countdown activities...but here goes. :)

breakfasts (5)
applesauce on toast
cornmeal mush and honey
oatmeal with pumpkin seeds and cinnamon
yogurt with flax meal and lemon cranberry muffins
cold cereal and fruit

baking (2)
Ginger Apple Pandowdy (didn't get to it last week)
Grandpa's sticks

lunches (5) + green drinks
couscous and feta stuffed peppers
hot dog sandwiches, veggies and dip
egg salad sandwiches, cooked carrots and peas
chik'n and rice casserole
zucchini coins with marinara and Parmesan, thin spaghetti and garlic bread

suppers (5)
mazidra {lentils and rice}
sweet potato fries, chik patty sandwiches
pita bread with the fixins, maybe even sweet potato falafals
gingerbread pancakes with old fashioned maple syrup
hot drinks and smoothies (haha)
