Cherry Almond Crumble

Cherry Almond Crumble
inspired by Honey and Jam

Crumble Topping:
1 cup chopped almonds
1 cup whole oats
1/2 cup white flour
1/2 cup ww pastry flour
1 cup almond meal
1/2 cup flax meal
1 tsp salt
1/2 cup brown sugar
1/2 cup coconut oil, softened

Cherry Filling:
8 cups cherries, pitted
1/2 cup brown sugar
4 Tbsp cornstarch
1 tsp vanilla 

Preheat the oven to 350 degrees. Mix the dry ingredients together, then stir in the coconut oil and press together with your fingers to form clumps. Mix the cherries, sugar, cornstarch and vanilla. 

Transfer the cherries to a 9x13 baking dish and spread the crumble topping over them. Bake for about 45 minutes, until the topping is golden and the filling is bubbly. Enjoy!
