Best Bran Muffins
These have become a staple around here -- usually Tim makes a batch on the weekend. They don't last long.
Thought you might like to give them a try!
Last weekend he made them with rhubarb, since we're pulling it out of the garden by the bucketful.
I think my favorite version is with chopped dates. The kids love them all the time.
Best Bran Muffins
a family recipe, turned vegan
Dry Ingredients:
1 1/2 cup wheat bran
2 tablespoon flax meal
1 cup white flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Wet Ingredients:
1/4 cup almonds
1 teaspoon honey
1 1/3 cup water
1 tablespoon lemon juice
1/4 cup oil
1/2 cup brown sugar
1/2 teaspoon vanilla
1/2 c. raisins, chopped dates OR mashed banana
Preheat the oven to 375 degrees F. Blend wet ingredients and almonds in a blender. Mix dry ingredients together. Combine wet and dry ingredients and add chopped fruit. Spoon into greased tins. Bake 15-20 minutes until a toothpick comes out clean. Makes 12 muffins.
