{inspire} Breakfast in April
At this point in the world's history, I don't know what I would do without coconut {milk, oil, shredded -- all of it} and yams {you know, what everyone else calls sweet potatoes}. They are fundamental in my kitchen. Irreplaceable. So nobody take them away from me, y'hear?
It's April. For me, it's a month of looking forward to better things {read: summer heat and Second Coming}. Getting up early in the morning to make a hearty breakfast seems like a better idea in the spring.
Don't these all look like really great ideas?
Apple Crisp Muffins from But Can She Bake? {dairy free}
Sweet Potato Hash from Running to the Kitchen
Sweet Potato Frittata with Tomato Salsa from Cooking Melangery
Almond Flour Cinnamon Rolls from Urban Poser {gluten and dairy free}
What are your favorite spring breakfasts? Do you have an Easter morning food tradition?
